1.0 lbs. Briess Pilsen Light DME
2.0 lbs. Crystal 20L Malt
1.25 oz. Nugget Hops (12.8% AA)
1.0 oz. Newport Hops (10.0% AA)
0.75 oz. Ahtanum Hops (4.5% AA)
1 pkg. Ferentis Safale US-05
Phase 1: The Boil
Steeped grains for 20 minutes between 150 – 160 degrees in the hop bag and then removed and brought wort up to a boil for 60 minutes. Added all malt extracts and bittering hops (Nugget). At 15 minutes left in the boil I added flavoring hops (Newport) and one teaspoon of Irish Moss. At 5 minutes left in the boil I added aroma hops (Ahtanum).
Phase 2: Primary Fermentation
Transferred wort to the fermentation bucket with about 8 lbs. of ice in the bottom. Added 2 gallons of water to bring total volume to 5 gallons. Measured starting gravity was 1.058 which gives us a calculated 75 IBUs. Allowed brew to ferment for 8 days before racking.

Man I totally forgot to finish this post. The beer turned out fantastic and didn’t last too long in my house. Got better with age too. I tried do another IPA that was lower gravity but it turned out too carbonated. Definitely going have to try to do this one again.
